Xin Yang Mao Jian is one of China’s most renowned green tea,s with fame that rivals Long Jing green tea. It is listed as one of the Ten Most Famous Teas in China. Mao Jian means “furry tip.” The processed tea leaves present as small, thin needles with white hairy parts on the leaf.

This Mao Jian is harvested from indigenous heirloom tea trees from the most renowned village of its historic origin mountain Che Yun Shan. The tea trees are located on the favored side of the mountain that faces southeast. Che Yun Shan is located in the southernmost section of Henan Province, China.

Mao Jian is 100% handmade and charcoal-baked. The tea goes through one week of resting time between primary processing and fining, as well as the three week mandatory resting time after fining that is required for all traditional teas. This is to ensure that we capture the best a vintage has to offer. Our Mao Jian crafting includes Ti Xiang. Ti Xiang is a baking technique that enhances and purifies the tea’s aroma without altering its original flavor profile. The process is usually done at least three weeks after the tea has been baked. Teamakers will often skip Ti Xiang since it is easy to ruin a batch of tea if it is made incorrectly. For a historically famous tea to deserve the prestige, it needs to be made with the utmost skills and rigor, where there is no corner cutting to save time or to increase the batch size.

The result is a classic Mao Jian that is sharp but not aggressive, aromatic and grounded, umami and delicately floral, with long and layered aftertaste. Overall, Xin Yang Mao Jian is outstanding! Health benefits: includes a rich amount of Catechins and Epicatechins which are antioxidants. These compounds belong to a group of plant chemicals called Flavonoids. Polyphenols are present which are packed with antioxidants. The amino acid L-Theanine is present. Caffeine is present in Gua Pian.

Brewing Instructions

Glass or porcelain tea ware (pitcher/gaiwan/teapot) is recommended. Heat the water to 85°C/185°F. First, warm the teacup and pitcher/gaiwan/teapot.

Two Fairness Pitchers (300ml): Use 4g to brew open vessel style. Use two similar pitchers, one for brewing and one for accepting the liquid through a filter. 1st steep 2 minutes. 2nd to 4th steep 30 seconds.

Gaiwan: Use 4g for 100 ml. 1st to 5th steep 3 seconds. 6th to 9th steep 7 seconds.

Teapot (glass or porcelain): Use approximately 4g for 150 ml. Steep 25 seconds. Add 10 seconds each additional steep.
